It always amazes me when a recipe that I would consider easy to make ends up being a favourite in our household!
The boys were raving over this recipe the last couple times I made it, and they almost ate the whole dish to themselves!
It’s very simple to make, and it’s so tasty! All of the spices pair so well with the main ingredient which is Bush’s® Original Baked Beans. On their own they are amazing to pair with a dinner, and in this appetizer, they were the perfect main ingredient! Bush’s® Baked Beans come in 7 delicious flavours, so you can customize this Bean Bake in so many different ways.
Here is the recipe for my Mexican Bean Bake!
Ingredients:
2 Cans of Bush’s Original Baked Beans
1 Tablespoon of olive oil
1 Medium onion, diced
2 Cloves of garlic, chopped
2 Teaspoons of paprika
2 Teaspoons of cumin
2 Teaspoons of chili powder
4 Diced tomatoes
First, preheat the oven to 350 degrees. Chop up the onion, garlic and tomatoes and set aside.
Heat the olive oil in a saucepan and add the onion, garlic and chili powder. Simmer on medium until the onions become translucent (3-5 minutes). Add the cumin and paprika, and stir for another minute.
Add the diced tomatoes and the cans of Bush’s® Original Baked Beans to the pot. Bring to a boil.
Transfer everything to an oven-safe dish, cover with foil and place in the oven for 15 minutes.
Remove from oven and add garnishes if you wish! I added in some guacamole, sour cream, pico de gallo and slices of avocado.
Serve with tortilla chips!
This recipe is so good, and so incredibly easy! I personally make it as an appetizer, and I think it would be great for a party.
