I think that the one meal time in my home that is a bit neglected is lunch time! I feel like I don’t put enough effort into creating something a bit more interesting because lunch is just one of those meals that is rushed for me.
Over the last few months, I’ve tried to make more of an effort with my lunches, and one recipe I’ve really loved making (and eating) was my Black Bean Fiesta Quesadillas!
These are so easy to make that I’m not sure why I didn’t make a little extra effort with lunch sooner!
The main ingredient for these quesadillas is Bush’s® Black Bean Fiesta Savoury Beans. Normally I add sweet corn and bell peppers to my quesadillas, but Bush’s® Black Bean Fiesta Savoury Beans include all of those ingredients! It doesn’t take much more to have these quesadillas done in minutes.
There are a few homemade options with this recipe which include the guacamole and the salsa. This part is totally up to you – it might be easier to use store bought options, or if you are feeling a little more energetic try out my guacamole and salsa recipes as well!
Here is my recipe for my Black Bean Fiesta Quesadillas!
Black Bean Fiesta Quesadillas
2 cups of Bush’s® Black Bean Fiesta Savoury Beans
1 cup of shredded mozzarella
1 cup of shredded cheddar cheese
6 flour tortillas
2 tablespoons olive oil to grease the pan
Preheat the oven to 200 degrees Fahrenheit. Pop the tortillas in the oven on a baking sheet so they can warm up for a few minutes. Remove the tortillas once warm, but leave the pan in the oven to keep the finished quesadillas warm.
Add a pan to the stove on very low heat.
Sprinkle a bit of the mozzarella and cheddar cheese across one half of the tortilla. Add three spoonful’s of Bush’s® Black Bean Fiesta Savoury Beans on top of the cheese, and then sprinkle more of the mozzarella and cheddar cheese on top.
Add a dash of olive oil to the pan that is warming up. Fold the tortilla in half, and add to the pan. Carefully flip the tortilla when you see each side turn golden brown. Slice in half and add to the baking pan in the oven so the quesadilla can stay warm until you are finished making the rest of the batch.
Serve with fresh salsa and guacamole – see below for my homemade recipes!
2 ripe avocados
½ small onion, diced
2 roma tomatoes diced (optional)
1 tablespoon of fresh chopped cilantro
1 jalapeno pepper, seeds removed and diced
2 cloves minced garlic
½ lime, juiced
½ teaspoon of salt
Slice the avocados, remove the pit, and scoop avocado into a bowl. Mash with a fork, and then add the remaining ingredients. Add more lime juice or salt to taste!
3 fresh tomatoes
½ red onion
2 serrano chiles, chopped
½ cup of chopped cilantro
Pinch of ground cumin
Salt and Pepper
Chop the tomatoes, chiles and onions. Add all of the ingredients to a bowl and add the lime juice, cumin and a pinch of salt and pepper. Add more salt, pepper and cumin to taste!
That’s it! I love this simple lunch that packs so much flavour! The amazing part about the main ingredient – the Bush’s® Black Bean Fiesta Savoury Beans – is that they are so full of bold flavour! The quality of the beans are amazing on their own, but I love that these Savoury Beans are so flavourful. I’ve added them to a chili I made as well and they were the perfect addition.
The last time I was at the grocery store I was surprised how many different Bush’s® product varieties there were on the shelf. All of the different options make cooking with them so much easier because the different flavours bring something extra to each dish. Bush’s® is a family-owned brand that produces high quality products, and I’m a big fan of everything I’ve tried.
